In April, our International Breakfast for Lunch program explored a more savory side of breakfast by featuring flavors from Japan. A traditional Japanese breakfast is very similar to a traditional lunch or dinner. It may consist of rice, miso broth, vegetables, fish, or a rolled egg omelette (called tamagoyaki). Although this morning meal style may seem a bit too heavy to Americans, it is meant to be light yet filling.
Pictured below is our take on a traditional Japanese breakfast: marinated salmon, veggies, and a ginger miso broth atop a bed of brown rice. Students enjoyed the rare appearance of Salmon and miso in the dining hall and got to experience a new dish from another culture.
